Alfredo Romani, from A. Romani Italian Truffles & Delicacies, is the long-time supplier of the finest truffles at George. With Truffle Season around the corner, we spoke to Alfredo to discover his secrets of the trade and insider tips on how to tell the good from the bad (truffle, that is). Having supplied The Club with the highest quality truffles for over a decade, Alfredo knows a thing or two about the subterranean fungus that grows in the shadow of oak trees.

How do you source the truffles?

I have a team of truffle hunters sourcing the ingredient from Central Italy. Our business has been family run since the beginning; our hunters are an extension of our family. Relationships in truffle farming are hugely based on trust.

What determines the quality of a truffle?

Generally, the stronger the smell, the better the quality. Climate conditions play a huge part in determining the standard of the truffle yield. The size of the truffle can give a good indication of the price you will pay, large truffles are extremely rare finds and so will come at a premium cost. Other than pungency and size, the character of a good truffle can be seen from the flesh, which should be light brown with a defined marble texture.

What method would you recommend when using truffles in cooking?

I have one simple recommendation here… don't cook it! Keep the recipe simple, and use it as a sort of seasoning on dishes. When storing truffles it’s important that they are sealed properly and not frozen.

Where can we find the best truffles?

Where we source our truffles in Central Italy is known for some of the best yields in the world.

Finally, what is your favourite way to eat truffles?

I like to season any egg dish I am having with truffles, the two ingredients compliment each other superbly!

George is excited to announce a new monthly series, 'George's Quiz Night', landing this October. The first to take the stand as our Quiz Host is English sports broadcaster and the face of horse racing in the UK, Ed Chamberlin.

Each month the Quiz will take on a different host and theme, with questions predominantly focused around general knowledge, food, music and culture. In celebration of the Rugby World Cup, the series kicks off with a Sports Edition on Wednesday 23rd October.

It wouldn't be a real Quiz Night without prizes to be won! First place winners will receive six bottles of champagne, second place one bottle of champagne, and third place naturally, will take home a wooden spoon for their loss!


Members are invited to form a team of between 4-6 players. Set sharing-style menu priced at £40 per person (excluding service charge).
